Our most valuable product is the Traditional, the true Traditional Balsamic Vinegar of Modena, created by the harmonious work between Nature and human sensitivity.
Traditional Balsamic Vinegar of Modena (ABTM) is closely linked to the tradition handed down from father to son in the Modena families and is an integral part of our cultural heritage.
Since 2000 the ABTM has obtained the P.D.O. (Protected Designation of Origin) qualification and has a very strict production disciplinary, which guarantees 100% naturalness.
Only and strictly the grape must of selected vines in the Modena area is used (Trebbiano and Lambrusco, but all the other native Modena vines are allowed to be regulated) and is cooked over direct fire and open air until the optimal sugar level is reached .
The must is then left to decant in steel or wooden containers or in demijohns and then passed into the vinegar cellar.
The ABTM is not bottled by the vinegar factory that produces it, but in a single bottling center certified by MIPAAF and the certification body, at the ABTM Protection Consortium with the patronage of the Modena Chamber of Commerce.
In this regard, ABTM is one of the few products to have an unmistakable and unique bottle shape. It is a glass container that resembles an ampoule in shape and has a unique format and capacity of 100 ml.
There are two capsules that diversify the production chains:
The amaranth capsule identifies the Traditional that has at least 12 years of aging.
The gold capsule represents the "Traditional Extra old" which has at least 25 years of aging.
Both must have passed the organoleptic examination of a commission of expert tasters who deem it suitable for bottling.
Acetaia La Tradizione, in addition to the capsules, has a personalized box.
IVORY color for the Traditional with amaranth capsule and at least 12 years of aging YELLOW color for the extra-old, with at least 25 years of aging and the golden capsule.
In our catalog there is also an ORANGE-colored box, an extra-old one coming from fifty-year-old batteries, typical of our Company.
The Acetaia la Tradizione is a cooperative of members, owners of vinegar factories handed down for generations, from grandparents and ancestors, whose grandchildren continue today to produce Traditional Vinegar with the same Code and passion handed down and transmitted well before it became a commercial product valuable.
